Description

A timeless homestyle pasta blending sweet tomatoes, fresh basil, and penne into a vibrant, flavor-rich meal perfect hot or cold.


Ingredients

Scale

12 oz penne pasta

3 tbsp olive oil

1 small onion, diced

3 garlic cloves, minced

1 28oz can crushed tomatoes (or 1.5 lbs ripe fresh tomatoes, chopped)

1/2 tsp salt, to taste

Freshly ground black pepper

1/2 cup fresh basil leaves, torn

1/3 cup finely grated parmesan or cheese of choice


Instructions

1. Boil pasta in salted water until al dente. Reserve half-cup pasta water.

2. In a skillet, heat olive oil over medium. Sauté onion until soft, about 3 min. Add garlic. Sauté 1 min.

3. Pour in tomatoes. Add salt. Simmer on low 10–15 min, stirring. Sauce should thicken.

4. Stir in most of the basil. Simmer 2 more min.

5. Toss in cooked penne and reserved water. Mix to coat. Adjust seasoning.

6. Remove from heat. Stir through cheese. Top with extra basil, serve warm or chilled.

Notes

• For added depth, include a splash of balsamic vinegar.

• Swap parmesan for vegan cheese or nutritional yeast.

• Excellent as leftovers and in pasta salads.
