Ingredients

6 cups mixed greens or baby spinach

2 ripe pears, sliced

4 oz Roquefort cheese, crumbled

1/2 cup candied or toasted pecans

1 avocado, diced (optional)

1/4 cup thinly sliced green onions

1/4 cup dried cranberries (optional)

1/3 cup olive oil

3 tbsp red wine vinegar

1 1/2 tsp Dijon mustard

1 clove garlic, minced

1 1/2 tsp sugar

1/2 tsp salt

Fresh ground black pepper


Instructions

1. Prepare greens and slice pears.

2. Toast or candy pecans in a dry skillet with a little sugar, then cool.

3. Whisk olive oil, vinegar, mustard, garlic, sugar, salt, and pepper for dressing.

4. Combine greens, pears, cheese, pecans, avocado, onions, and cranberries in a large bowl.

5. Drizzle with dressing, toss gently, and serve immediately.

Notes

Substitute walnuts or almonds for pecans.

Use Gorgonzola or feta if Roquefort is unavailable.

Add pomegranate seeds or apples for a twist.
