Description

Ingredients

8 oz cooked salmon, flaked

6 large eggs

1/4 cup grated cheddar cheese

2 tbsp chopped chives

1/2 cup chopped asparagus or zucchini

Salt and pepper to taste

Olive oil for greasing

Lemon wedges for serving


Instructions

1. Preheat oven to 350°F (177°C). Grease a muffin tin with olive oil.

2. In a large bowl, whisk eggs, then add cheese, chives, and vegetables.

3. Fold in flaked salmon, season with salt and pepper.

4. Divide mixture evenly into muffin tin.

5. Bake for 20–22 minutes until set and golden.

6. Let cool slightly, then remove from tin and serve with lemon.

Notes

Use smoked salmon for a bolder flavor.

Store leftovers in an airtight container for up to 5 days.
