Ingredients
1 pizza dough (homemade or store-bought)
1/2 cup barbecue sauce (plus more for tossing)
1–2 cups cooked chicken, shredded
2 cups mozzarella cheese, shredded
1/2 cup smoked gouda or Monterey Jack, shredded
1/4 red onion, thinly sliced
Fresh cilantro, chopped
Optional: bacon, jalapeños, pineapple, blue cheese
Instructions
1. Preheat oven to 450°F. Roll out pizza dough on a floured surface.
2. Spread a thin layer of barbecue sauce over the dough, leaving edges bare.
3. Toss shredded chicken with 2–3 tablespoons barbecue sauce.
4. Sprinkle half the cheese over the sauce, then add chicken and red onion.
5. Top with remaining cheese and optional toppings.
6. Bake for 10–15 minutes until crust is golden and cheese bubbles.
7. Remove from oven, sprinkle with fresh cilantro, and slice to serve.
Notes
Use rotisserie chicken for convenience.
